PASTA E TIRAMISÙ
Dear Caroline,
Mamie arrives today! But I’ve got a full day before she lands. Today is my first cooking class in Italy. I am so excited! I have my outfit picked out and I’m going to get to use my knives! Everyone told me I was crazy to bring them with me, but look who’s laughing now! I wore my black city leggings from Old Navy and a half sleeve turtleneck knit from Zara. I looked so European!
We got to the cooking class and it was all set up for pasta making and tiramisu. I’m so excited! We started with the tiramisu because the coffee needs time to soak into the cookies and for everything to meld together. I’ve made tiramisu before and it was such a complicated recipe. I was so surprised at how simple today’s recipe was.
TIRAMISÙ RECIPIE
1 egg per person, separated
1 tbsp sugar per person
2 ladyfingers per person
Some cooled coffee
71g of mascarpone
Some cocoa powder
Super easy and takes no time to make! Next was the pasta making. This is my second pasta making class, I did one with my mom last summer, and I’m starting to realize that either I’m an impatient know it all or I need to pick more advanced classes. Don’t get me wrong I had a blast and I would do it a hundred more times, but when the teaching chef is on step two and you’re already on the last step cutting your fettuccine you start reevaluating things. I did learn a new trick to hand roll out the sfoglia (pasta sheet). It’s a little hard to explain here so when I come back our first project together will be making an Italian dinner for the family.
After we made our pasta they took us to their patio where we sat and hung out while they cooked our creations. We had three options of preparations:
Amatriciana: a sauce made with tomatoes, guanciale (bacon) and pepper.
Cacio e pepe: a sauce made of cheese and pepper
Pomodoro e basilico: a traditional tomato sauce and fresh basil.
I chose amatriciana, so far it’s my favourite and it was delicious. The tiramisu was also amazing! Not the gritty eggy and over powering versions we have in Canada and the US. I’ll have to find a coffee alternative so we can make some for your family.
Mamie landed at 2pm and headed to her B&B. In preparation for Rome, mamie was convinced she could navigate Rome without a functioning phone. She had decided she would keep her phone on airplane mode. Well when I couldn’t reach her to direct me to her place I realized this was not going to work. I got her all set up with an Esim and now she’s got a working phone and we can communicate whenever. I brought her a sandwich from Antico Vinaio, a famous panini shop here.
Tomorrow is a city day before we head to Florence on Sunday. Will keep you posted!
